随着世界人口的增加和可种植土地的减少，食品紧张问题越来越突显，植物性食品将更多地用于补充动物性食品的不足。此外，随着人们出于特殊或一般健康原因而越来越多地消费植物性食物，植物来源食品的需求也越来越大。目前，全面揭示可食性植物组织采后生理特征还存在一些难点，需要通过进一步研究以提高充分利用采后农作物的能力，为消费者提供更高质量的产品。从有关植物生理学的基础研究中，我们也可以逐渐建立全新的植物类食品的生产方式、品质改良手段以及保藏方法。重组DNA技术为大幅度改善植物类产品的品质提供了可能，但新技术的应用要求我们对决定产品品质的生物化学因素有充分的理解。 推荐阅读书目 Bartz，J.A.and J.K.Brecht (eds.)
